Garlic Roasted Chicken


4 half chiken w/o wing, clean and paded dry 
I bulb garlic , peal and chopped devide by 2. 
Handfull chopped parsley
Half onion chopped 
Half onion slice and inch 
2 tbs of butter
2 tbs of oil 
Pinch Salt, pepper and curri powder (option)
Hand full slice button mushroom
2 handfull baby carot
4 cup chicken stock/ liquid

Direction 

Mix together butter, half chopped garlic, chopped onion, chopped parsley, salt pepper, oil 
Sneak in under the chicken skin
Meanwhile, 
Place the carot, slice onion, mushroom, galf chopped garlic in the botom of baking glass dish then add the chicken stock in the baking dish. 
Then add the chicken on top of it

Place in the oven preheat 400f for 1 hour covered then bake another 1 hour without cover in 450 f,  Pour the broth in to the chicken every 20 minutes. 
Then served. With any condiment you like, rice, potatoes or even your fav salads. Happy trying 



 optional choices :
when its done , take the chicken out, then blended all the onion, garlic,carrot and the broth that left in the bottom and make it as gravy or sauce for your roasted chicken :)



Protein fruits cookie bars

1/2 fresh Pineapples chopped and clean
1/2 cup coco it water 
1/4 palm sugar ( optional )
3 egg whites
1 1/2 cup of raw ostmeal
1/2 cup flax seed
1 cup of raspverry 
1 cup of blue berry 
2 Tbs coco powder
1/4 cup agave or honey


Direction

Blend together pineapple and coconut water until its smooth and creamy

Add palm sugar then egg whites blend until its creamy and stiff aroung 5 minutes 

Then add oatmeal, flax seed, blend again for the ladt time until the oant meal grind it

Take it out from blender then  mixing together with fruits, place in the baking glass with parchement papper on it then springkle the coco powder on top and drizel another 3 tbs of agave or Honey 

Bake in 375 f for approx 35-40 minutes. 


As soon as you take them out let it cool down a bit in approx 10 minutes then Cut the way you like it then, Back in the oven in 450f for 10 minutes 

You can served it hot with drizzle of  agave or Hone just like my breakfast today (heat it up if yo need it ) . Or let it cool down all the way like a soft cookies bar.

Lemon batter pan fried tilapia on mango habanero salad

Mango Salad:

3 semi ripe mango peeled and bite size   cut.

2 pinch if salt 
1 tbs of pepper
3 tbs balsamic vinegrete
2 handful chopped cilantro 
1 habanero chopped really fine
Half lemon juice

Combine all ingredient above in big bowl stir gently and let it a side

Lemon butter tilapia:

6-10 fillet frozen or fresh tilapia wash and cut in half the way you want it.
Cup of reg flour
Cup of corn starch 
1 tbs salt pepper each
1 handful chopped parsley
1 egg
1 cup of chicken stock
Combine all the ingredient above together for making the batter. Add the tilapia after 
Then pan fried them until golden crisp..


Lemon Butter Sauce:

Half stick of unsalted butter
Handful chopped flat parsley 
Thin slice of 3-4 shallot 
Thin slice of 3 garlic
5 tbs of olive oil 
1 lemon juice 
Melting the ingredient above in really low heat just until it bubble. Set a side   

Place mango salad in to a plate then add the crisp fish while is hot. Then pour 1-2 tbs on each plate over the crisp tilapia.

Shrimp vermicelli noodles salads

2 clove of Garlic finely chopped 
1 Medium size onion roughly chopped
8-10 Roma tomatoes ( without the Heart)      roughly chopped or bite size 
Handful of chopped cilantro
1/4 cup chopped spring onion. Tge green part 
5 lime juice
3 lemon juice
2 tbs fish sauce
1 tbs rice vinegar
1/4 cup packed of brown sugar
3 tbs of salt
1 tbs of black pepper 
2 lbs clean and peeled raw shrimp, then blench it 
Mix all of the ingredient above then refrigerate for at least 3 hours or over night 

Pack of vermicelli  soak in the boil water for minutes. Then set a side 

1 medium avocado, cut in half get the flesh for garnish on the side plate

My detoxing juices adapt by Anah Duffy

1 medium size of red beets
3 green apple
3 red Apples
5 Carrots
Thumb size of fresh ginger
5 inch sliced of fresh pine apple 
3 mandarin or any oranges 
5 Tbs of chia seeds

Mix all the fruits in a juicer. Set a side. Add the chia and let it set for 10 to 20 minutes. Then ready to consume.

Home made Shrimp Salsa



15 - 20 Roma Tomatoes (medium size, Peel the skin/skinless and Chopped)
5-8 Clove of Garlic
3-4 jalapeno (roasted and peel the skin then chopped)
1 Onion (chopped)
1/2 Red onion (chopped)
1/4 Cup firm Pack chopped cilantro
1 Can Tomatoe sauce
2 Lbs chopped medium size raw, clean, skinless Shrimp
3 lime ( to get the lime juice)
1 Tsp salt
1 Tsp sugar
1 tsp pepper


********
Mix all ingredient above, beside Shrimp, cook in  low heat for 30-45  minutes then add the shrimp then cook for another 5 minutes in medium heat or until boil then remove from the heat. let it cool for serve..... happy trying

Creamy Chiken Penne with Brocolli


1 Box of Veggie Penne/ or any penne you like ( prefer Barilla)
300gr or more (as much as you like) chopped brocolli with
3-4 clove of Garlic
1/2 chopped onion
2-3 Lbs of chicken breast , bite size cut
2 Tbs olive oil
Pinch Salt
1 Tsp of black pepper
4-6 Tbs of cream cheese
3/4 cup of milk
Grated / Shaved Parmegiano cheese  for topping (as much as you like)
1/2 Tsp of chilly flakes

Boil water add 1 tbs of salt in to water..let it boil then add the penne for 10 minutes or less then add chopped brocolli and boil for another 5 minutes..
Drain the water from the penne and Brocolli then set a side.
Meanwhile heat the pan in the medium heat then sautee the onion and the garlic...for about 5minutes add the chicke cook for about 7 - 10 minutes then add milk and the cream cheese stir it , until is thick add the penne and the brocolli then keep stir  until it combine.
add the chilly flakes,  served with toping of Parmigiano cheese....happy trying
