Special chili paste for the Oxtail soup


1/4 Sweet soy
1/8 Light soy
5-10 Fresh chili chopped
2 ripe tomatoes without the seed (chopped)
2 Fresh shallot slice thin
1 Tbs fried Shallot
1 Tsp garlic fried
1 Pinch of pepper

Mix all the ingredient above then serve with the oxtail soup (previous recipe)



Grill Oxtail Soup


1 Package store bought oxtail (approx 2 lbs)
250 G of baby carrot
1 Sweet onion
3 Clove of garlic, peel and slice thin 
2 Shallot, peel and slice thin
500 G of rustic potato
100 G celery stalk (chopped)
Handful celery leaf
2 Tbs store bought fried garlic
2 Tbs store bought fried shallot 
2 Box of low sodium beef broth
1 Pinch salt and pepper, sugar
2 tomatoes cut in cube
2 Tbs of olive oil
1  Green lime juice

Place pot on medium heat, add the oil.
Add onion, (sliced thin) garlic and shallot, celery stalk, saute until it soften a little then set a side.
Add the oxtail at the same pot brown it all around the oxtail w/o oil.
Add beef broth and cooked for 3-4 hour in medium heat and cover until tender.
Then strained the oxtail and leave the broth in the pot.
Add the potato, carrot, tomatoes, inside the broth and cook for 15-20 minutes or until the potatoes tender, then add salt, pepper, sugar to taste. 
Then add celery leaf and the remaining ingredients (onion, celery stalk...etc) remove the sup from the heat and place it in the serving bowl.

Place the oxtail on stove top grill or any grilled you have. 
Grill until brown color show on the whole side of the oxtail or if happen to be fall apart meat even better, just turn it over, and place the middle bone in the pot with the rest of it.
last but not least, place the meat on top of the sup, and sprinkle fried garlic and fried shallot, then the lime juice.

Protein Salad (Siomay)


(See the previous recipe) and add with below ingredients. 

1 Boiled Egg and cut in 1/4
1/2 Cup of peanut sauce/ Peanut butter
1 Tbs sweet soy
1 Tbs of light soy
1 Pinch salt and pepper
1/4 Lime juice
1 Tbs of sriracha chilly/ sambal abc, 
    (to top it up the salad) if prefer spicy

Mix all Peanut butter, sweet soy, light soy, salt pepper. 
Stir it untill it combine good.
Then pour in to the rest of Ingredients: boiled egg, tofu filling, cabbage filling, chicken shrimp balls (all cut in 1/4), and if you like it spicy add  any chilly paste you have and the lime juice.....its awesome!!!!!!







Shrimp Chicken filling for everything


2 Lbs of chicken breast
1 Lbs of fillet shrimp
1 Tsp of salt
1 Tsp of white pepper
2 Eggs
1 Pinch of sugar
1/2 cups chopped spring onion (green part)
3 clove of garlic
1 Tbs of garlic fried
1 Cup of tapioca starch
2 Tbs of corn starch
1/2 vegetables oil

Combine all ingredient together in food processor.
(Add the flour a little at the time)
Until it blend and ready to fill in to your favorites.
(such as: Tofu, cabbage, or even make chicken balls) as shown on the picture above.
(you have to boil the cabage for approx 3-5 minutes and the tofu) to make work easier.....Happy trying









Indonesian Vegie Salad (Urap urap)


2 Cups asian long green bean/green bean (cut in 3 inc)
2 Cups of beansprout
3 Cups cabbage, chopped in lengthwise
3 Cups watercress leaf
1 Cups shredded coconut
2 Tablespoons of red chili paste
Thumb size of galangal roots (lengkuas)
3 Clove of garlic
2 Tsp of  cutcherry powder  (kencur)
1/2 Tsp salt
1 Pinch of sugar
1 Galangal roots (thumb size, thin slice)

Steam/ boil all the veggies, then leave it until the water all drained.
Grind all the ingredients (except coconut shredded) and mix it together.
Then combine the mix and the coconut together until the coconut change to little reddish color, steam for 20 - 30 minutes.
Then mix the coconut and the veggies. (recommend , to eat with steam white rice , or just grilled chicken and egg over easy, show on the picture)




Lime Chicken


2  Lbs chicken breast
1/2  Red onion
2 Piece roma tomatoes
1 Green lime 
1/4 Cup chopped cilantro
1 Tbs of red pepper powder
1 Tsp of cumin powder
1 Tsp of coriander  powder
1/2 Tsp Chili flakes (chili powder)
1/2 Tsp Salt and pepper
1 pinch of sugar
1 Tbs maggi seasoning
2 Tbs olive oil

Cut the chicken breast lengthwise, marinated with salt pepper, red pepper, chilly, cumin, coriander, sugar, maggi seasoning, let it rest for 1 hour.
Place frying pan in medium heat, add olive oil then red onion, cook until brown a little then add tomatoes and marinated chicken, cook for 5 minutes, add the juice of 1 lime, and the cilantro. 
Cook for another 2 minutes cover. 
Then serve with Lime and cilantro garnish on top.

(I recommend to serve with steam white rice or wrap on Tortilla)  Enjoy!!!!!!!!

Saute veggie w/ chicken and beef balls (Cap cjai)




















5 Beef balls (cut in 1/4)
250 G cauliflowers
250 G green cabbage
100 G button mushroom (cut in 1/4)
2 Filet chicken breast
5 Sweet carrot (sliced thin)
5 Spring onion (green part only)
1/2 Sweet onion cut in square
3 Garlic clove slice
1 Tbs Corn starch
Pinch salt and pepper , sugar
1 Tbs maggi seasoning
1 Tbs light soy
1 Tbs sweet soy
1 Egg
1 tsp sesame oil
2 Tbs veg oil
5 Cups of water
1 Tbs chicken cube /powder

On high heat place a big wok add veg oil and sesame oil.
Add onion, garlic and chicken. cook for 5 minutes  then add egg, mix it together until combine then add all the vegetables and mushroom. Cook or another 5 minutes then add water. Cook cover for 5 minutes then add all the rest of the ingredient, before you add the corn starch in to the wok, mix it with 1/2 cup of water, then add it in to the wok. Last add the beef balls, cook for another 5-7 minutes before serve sprinkle the spring onion on top of it....happy trying and enjoy.




    

Beef balls sup or Bakso













1 Kg Ground Meat
500 Gram fillet Chicken Breast
1 Tbs baking powder
2 Clove of crush garlic
2 Tbs fried Garlic
2 Tbs of fried shallot
2 whites eggs
1 Tbs salt
1 Tsp White pepper powder
Pinch of sugar
2 cup of ice cube 
1 Cup of Tapioca flour/ starch
1/2 cup chopped spring onion

Add all of ingredient above (until tapioca flour),to food processor then add little by little, until  it combine together in 1 dough.  Then add the chopped spring onion in to the the dough and mix it. Heat half pot water (NOT until boil) just hot enough to cooked the meat balls

Make a small balls and place it in to the pot until it raises up.
then its done.

Insalata D' Pomodoro

3-4 Roma tomatoes (thin slice)
1 Linked Italian mozzarella cheese
2 Cups of arugula
1/4 Sweet onion (thin slices)
1 Pinch of salt and pepper to taste
1 Tablespoon grated parmigiana cheese
3 Tablespoons olive oil
1 Tablespoon Balsamic vinegar 
1/4 cup of chopped Italian bay leaf 
Italian bay leaf  for garnish

Mix together Slice onion and arugula and arrange tomatoes and the cheese as you like (look at the photo).
And drizzle the mix of balsamic vinegar, salt pepper, parmigiana cheese, And add chopped bayleaf.  Ready to serve.


My Savory Tropical Salad


2 Kiwi fruits (cut in a small square).
2 mango fruits (cut in small square).
1 Avocado (cut in cubes).
1 Red peppers (cut in small square).
1/2 Pineapple (cut in small square).
1/2 cup of cilantro leaf /coriander leaf.
1 pinch salt and pepper, sugar to taste.
2 tablespoon of lime juices.
2 tablespoon of olive oil.
1 tablespoon of parmigiana cheese.

Combine all the ingredient, then serve. (I prefer having it on lunch time so refreshing) hope you all enjoy as i did.....








Lemon Butter Seafood


1 bag store bought seafood mix.
1 lemon (cut in half) and use half for the decoration
2 tablespoon of butter
1/2 cup of chicken broth
1/8 cup chopped parsley
1/8 chopped scallion
1/2 red pepper (sliced thin)
2 pieces Italian tomatoes (cut cube) 
1 garlic chopped
1 teaspoon lemon zest
Salt and pepper

Add butter to hot deep skillet, garlic, lemon zest.
Add the seafood, cook for 2 minutes, then add chicken broth, tomatoes, red peppers, cook until it boils, turn off  asap (remove from heat). Add salt and pepper to taste.. Last but not least sprinkle parsley and scallion , lemon juices, before serving. (I prefer serving with steamed rice)
Serve with Steam Rice
 
  

Indonesian Chicken Satay

  

1 package store bought Chicken Breast
   Cut in cubes (thumbsize)
10 or more skewer (soaked in the water before using it)
1 teaspoon of pepper
5 tablespoon of sweet soya (Kecap Manis)
5 tablespoon of light soya (Kecap Asin)
1 tablespoon Maggi seasoning
2 tablespoon vegetable oil
1 tablespoon store bought deep fried garlic
   chilly padi as you prefer.

Marinate the cube chicken with  sweet soya, light soya, maggi seasoning, veg oil, pepper. Leave it for at least 2 hours.  
and place it on the skewer. then grill, turning occasionally until it's brown perfectly approximately 5 to 10 minutes .

For the dipping sauce:
1/8 sweet soya + 2 tablespoon of light soya + deep fried garlic + chili + optional (For peanut sauce, add 2 tablespoon of peanut butter) then mix it together. Enjoy !!!!( Selamat Menikmati )
  

Pouched Salmon In Ginger Soya


Store bought fillet of Salmon with skin.
Thumb length of ginger (peel and slice thin)
Roasted sesame seed
2 garlic clove, sliced thin
1/4 cup of light soya
1 cup chicken broth (low sodium)
1 teaspoon sesame oil
1 tablespoon of butter
1 pinch of sugar

Place the Salmon in hot deep skillet, skin down, for 5-8 minutes.
Add garlic, ginger, and cook for 2 minutes, add sesame oil, soya, chicken broth, sugar. Then cover and cook for another 5 minutes...and its ready to serve with your preference (such as Rice, Couscous, Pasta),  Buon a pettito!!!!!


  
   

My Savory Kale Soup
















1 Bag of store bought chopped kale.
5 Pieces or more baby carrots
5 Green tomatoes
10 Sweet baby Italian tomatoes or any tomatoes (cut into cubes)
2 Links of any Italian sausage  (I prefer hot/spicy )
2 Chicken breasts (season it w/ salt pepper, grill and  cut in cubes)
2-3 Cups of chicken broth
5 Cups of Water
Saute the sausage until brown, add the chicken broth, add kale cook for 5 minutes. 
Then add carrots, and tomatoes, cook for another 5-10 minutes, until kale is a little soft.                                                                                   Then season with salt & pepper if needed.                                                                                    Then serve with grilled chicken on top.   ENJOY!!!!
