Grill Oxtail Soup


1 Package store bought oxtail (approx 2 lbs)
250 G of baby carrot
1 Sweet onion
3 Clove of garlic, peel and slice thin 
2 Shallot, peel and slice thin
500 G of rustic potato
100 G celery stalk (chopped)
Handful celery leaf
2 Tbs store bought fried garlic
2 Tbs store bought fried shallot 
2 Box of low sodium beef broth
1 Pinch salt and pepper, sugar
2 tomatoes cut in cube
2 Tbs of olive oil
1  Green lime juice

Place pot on medium heat, add the oil.
Add onion, (sliced thin) garlic and shallot, celery stalk, saute until it soften a little then set a side.
Add the oxtail at the same pot brown it all around the oxtail w/o oil.
Add beef broth and cooked for 3-4 hour in medium heat and cover until tender.
Then strained the oxtail and leave the broth in the pot.
Add the potato, carrot, tomatoes, inside the broth and cook for 15-20 minutes or until the potatoes tender, then add salt, pepper, sugar to taste. 
Then add celery leaf and the remaining ingredients (onion, celery stalk...etc) remove the sup from the heat and place it in the serving bowl.

Place the oxtail on stove top grill or any grilled you have. 
Grill until brown color show on the whole side of the oxtail or if happen to be fall apart meat even better, just turn it over, and place the middle bone in the pot with the rest of it.
last but not least, place the meat on top of the sup, and sprinkle fried garlic and fried shallot, then the lime juice.
